Here is the recipe:
Ingredients:
20g Gelatin Powder
120 g water
300 g glucose
300 g sugar
150 g water
200 g sweetened cond milk
300 g chocolate (white, milk, dark or a combination)
Food Coloring
How to:
Boil the glucose, sugar and water
Remove from heat and add the gelatin
Add the cond milk
Pour over chocolate and buerre mix to get rid of any air bubbles; use at 35C/95F.
For the marble effect combine different color glazes.

These mirror glaze cakes are amazingly beautiful.
I can do the glaze but not to this standard. I’m still learning.
Can you please tell me how you do the finish on the red cakes and the white one. Is it the warm spray gun contents that make this finish? I have tried looking up recipes and instructions but as yet have not found the information. Can you please help?
